Malwani Fish Curry

Malwani style fish curry is just right when you want to dive into dark piquant flavours in a single dish. We recommend you make it with Pomfret as the mild taste of this fish beautifully adapts the rich flavourful masalas. The dish gets its name from the famous Malwan town in Sindhudurg district of Maharashtra. It is well known for its seafood cuisine and acclaimed for its fish curry. So let us begin to learn.

List of Ingredients

Measurement is for One Portion = Two People
Steaks of 2 medium size Pomfrets
1 ½ tsp turmeric powder
1 lemon juice
3 medium onions
2 big tomatoes
2 tbsp oil
5-7 garlic cloves (whole)
20-25 curry leaves
½ tbsp mustard seeds
1 tsp cumin seeds
1 tbsp + ½ tsp chilli powder
1 tbsp + ½ tsp coriander powder
1 tsp cumin powder
1½ tsp garam masala powder
12-15 black pepper
3 diced garlic cloves
1 big bay leaf
10-12 dried garcinia indica (kokum)
1 tbsp grated coconut
1 tbsp ginger garlic paste
coriander leaves
salt to taste

Method

Step 1:   Marinate the fish

Ingredients: Pomfret steaks, 1 tsp turmeric powder, 1 lemon juice
Apply turmeric and lemon juice to Pomfret steaks and keep it aside for 30 minutes.

Step 2:   Masala preparation time

Ingredients: 2 medium size onions, 2 big tomatoes, 1 tbsp oil, 5-7 garlic cloves, 12-15 curry leaves, ½ tbsp mustard seeds, 1 tsp cumin seeds, 1 tbsp chilli powder, ½ tsp turmeric powder, 1 tbsp coriander powder, 1 tsp cumin powder, 1 tsp garam masala powder and salt
Tip: Remember, for Indian curries you can chop the onions roughly as it will get dissolved later in ginger garlic paste. Whereas, for Continental recipes chop it very finely.
Heat the oil in the pan. Add roughly chopped onions, whole garlic cloves, curry leaves, mustard seeds, cumin seeds and roughly chopped tomatoes. Sauté these until onions turn pale yellow. Then add the remaining ingredients along with two cups of water. Keep on stirring throughout that the masala combines well. Remove from the flame once you smell the aroma of masala. Cool it and grind it. Your masala is ready.

Step 3:   Time to make the Curry

Ingredients: 1 tbsp oil, 12-15 black pepper, 8-10 curry leaves, 3 diced garlic cloves, 1 big bay leaf, 10-12 dried garcinia indica (kokum), 1 tbsp grated coconut, 1 tbsp ginger garlic paste, ½ tsp garam masala, ½ tsp coriander powder, ½ tsp chilli powder, coriander leaves and salt
Heat the oil in the pan and add all the above ingredients one by one. Keep on stirring in between to ensure everything is mixed properly. Then, add the ground masala. Stir it well for about 10 to 15 minutes until the rawness of the masala is completely gone and you get good smell and taste of the curry. Malwani curry is of running consistency, therefore put off the flame at the right time to not allow it to reduce its consistency.

Step 4:   Ready to serve

Garnish it with coriander leaves. Malwani fish curry tastes good with steam rice. To make a whole meal for your guest, serve this with some fried fish.
